Mediterranean Salad

Summer eating includes lots of fresh salads. This Mediterranean Salad is wonderful on its own for a light lunch or as a side with all your outdoor grilled dishes.


Vinaigrette Dressing

  • 1⁄2 cup extra-virgin olive oil

  • 1⁄4 cup wine vinegar/apple cider vinegar

  • 1 tbsp lemon juice

  • 1⁄4 tsp red pepper flakes

  • 1 tbsp parsley and/or cilantr


  • Salt & Pepper


  • 1 cucumber, chopped

  • 1 bell pepper (any colour you like), chopped

  • 1⁄2 red onion, thinly sliced

  • 1-2 cups cherry or grape tomatoes, halved if you desire

  • 1⁄2 cup olives, chopped or whole (optional)

  • 1⁄2 cup crumbled feta

  • Salt & pepper


  1. To make the dressing, whisk all the ingredients together or you could also shake it all up in a mason jar. Set aside.

  2. In a large bowl, toss together all the salad ingredients: cucumber, bell pepper, red onion, tomatoes, olives, if using, and feta. Add a pinch of salt & pepper.

  3. Dress the salad just before serving.
