Summer eating includes lots of fresh salads. This Mediterranean Salad is wonderful on its own for a light lunch or as a side with all your outdoor grilled dishes.
1⁄2 cup extra-virgin olive oil
1⁄4 cup wine vinegar/apple cider vinegar
1 tbsp lemon juice
1⁄4 tsp red pepper flakes
1 tbsp parsley and/or cilantr
Salt & Pepper
1 cucumber, chopped
1 bell pepper (any colour you like), chopped
1⁄2 red onion, thinly sliced
1-2 cups cherry or grape tomatoes, halved if you desire
1⁄2 cup olives, chopped or whole (optional)
1⁄2 cup crumbled feta
Salt & pepper
To make the dressing, whisk all the ingredients together or you could also shake it all up in a mason jar. Set aside.
In a large bowl, toss together all the salad ingredients: cucumber, bell pepper, red onion, tomatoes, olives, if using, and feta. Add a pinch of salt & pepper.
Dress the salad just before serving.
