Creamy Berry Paletas

Paletas are a Mexican hot-weather frozen treat that is most often fruit based. Whether you call them popsicles or ice pops, this recipe is a winner with adults and kids alike. The berries are rich in antioxidants and the coconut milk is a wonderful dairy alternative and you get to control the amount of sweetness. A great way to celebrate summer!

Ingredients

  • 1 can full-fat coconut milk (14 fl. oz / 400 ml)

  • 2 cups (475 ml) your choice of ripe berries


  • 3-5 tablespoons (45 – 75 ml) real maple syrup

Preparation

  1. In a blender, mix all the ingredients together until smooth.

  2. Divide and pour the mixture into paleta/popsicle/ice pop molds.

  3. Place in freezer for approximately 6 hours or freeze overnight. 


TIP: If you want a chunkier paleta, add some additional chopped berries to the mixture after blending.
